White Beans Tartlets

300g of sugar
1 can of white baked beans
200g puff pastry
7 egg yolks
1 egg
1 tbspof wheat flour
2 tbsp of water
Powdered sugar (optional)

Mix the sugar with the water and let it boil until thread point (103 º C).
Throw in the drained and cooked white beans and let them simmer for 5 minutes over low heat. Mash and set aside.
Turn the oven to 180 º C and line the molds with the pastry.
Beat the egg yolks with the egg and flour and add the cooked beans.
Bring back to the boil and allow to thicken slightly over low heat, stirring constantly.
Put in the molds and bake for 20-25 minutes.
Let them cool and unmold.

Sprinkle with powdered sugar (optional).
